Vegetarian salad suggestions for summer?

I have sooo many recipe books and I am bored of all the vegetarian salads in them.

With the weather warming up, does anyone have any ideas?

roasted beatroot & feta salad.

coucus, grilled veggies, grilled houlomi.

great homemade ceaser (minus chicken, anchovies, etc)

torn bread salad- tomatoes, stale bread, vinergrete.

perhaps more side dishes than salad but that's what i'm thinking...
If you harbour bitterness, happiness will dock elsewhere.

I am not a veggie as such..but going to be more actively 50/50..I saw this website to some vegetarian salads and dinners and thought they sounded quite appetizing..you have to scroll to the bottom of the page on the link..i was going to start to give some of these a try.

One of my all-time favourites is mixed greens, tomatoes, cucumbers, pineapple, sultanas, feta, and walnuts, with a balsamic vinaigrette including some of the pineapple juice. Oh, and red onions if you like 'em. Recipe pinched from a lovely restaurant in San Diego.

Dead easy: black beans (tinned is fine!), handful of (frozen) sweetcorn, tomatoes, spring onions, bell peppers; dressing of soured cream, salsa, lime juice, and a bit of cumin.

Delia's warm lentil salad with walnuts and goat cheese

Quinoa salad with Moroccan-spiced lemon dressing

And vegetarianepicure.com has some lovely ones--I can highly recommend the barley salad!

i love this:

red kidney beans
cucumber
celery
pickled beets
salad onions (crispy)
croutons

toss it all with a little kraft light thousand island dressing

I like a Greek style salad with baby spinach leaves, slices of tomato, cucumber and red onion, feta cheese, black olives and a lemon & olive oil dressing.

My favourite salad is one they sell (or at least used to) at Cosi sandwich bars in NYC.

Baby spinach
Diced pear
Dried cranberries
Walnuts
Crumbled gorgonzola
Shallot vinagrette

I've been making a version of it this week with the Florette crispy salad, goat cheese, and Tesco's own brand (Finest range, I think) French style vinagrette.

If you're going non-veggie with it, a bit of chicken or turkey goes very nicely with it.

Tabouleh - I love tabouleh, is that boring?  But maybe that's not a salad?

I also love me a Greek salad. :)

I made a fantastic Orzo, Pea and Mint salad. Yummy. It was a big hit at a Greek dinner party I threw.
