another use for ripe bananas!

I love banana bread but while my DH will eat a piece or 2 and the kiddo a bit, the in-laws don't so I stopped making it otherwise I'd eat the whole loaf!  ::) So I was looking around for another recipe to use the ripe bananas in and found this:

Oatmeal Banana Hotcakes

They turned out really well. I froze them individually and now Sammy has one for breakfast in the morning so that's an added bonus for the boy with no appetite. I don't top it with banana as per the recipe, though. That's overkill for me. Just butter and a bit of syrup works for us!

i smash up over-ripe ones into my bisquick mix & toss in some chopped pecans. thems be some good pancakes!

I like to mash them up roughly, add in some  wholewheat flour, a teaspoon of brown sugar or honey, some water and a touch of milk. Mix well and fry. Makes a nice batch of banana fritters which can be served as is or with some honey. Lovely tea time snack. For variety try with some grated coconut or coconut milk or powder.

I live in lovely Maidenhead, Berkshire and I run a fun social group for locals & expats in Maidenhead so people can socialise and enjoy the town!

banoffee pie! or hot bananas from the BBQ are good  :P

We simply make banana milk.  The family loves it.

Just slice them up and fry them in butter with a little rum and brown sugar, then pour a bit of cream on when you serve. Yum!

You'd make all those things with really ripe bananas? I wouldn't use them for banoffee pie or fry them personally. Maybe I should change my topic to *really* ripe?! But I love the ideas for banana recipes anyway!
