Pumpkin Pie

So I want to attempt to make my own pumpkin pie however I've been looking online for recipes and every recipe calls for either nutmeg, cardamom, ginger or cloves and I have neither. I have cinnamon and the other stuff but none of that. I don't even have "pumpkin spice" whatever that is  :-\\\\

Does anyone have a recipe I could use that doesn't call for any of those? I'm going to use a can of pumpkin puree.

I also want to make my own crust but I have no idea what the best recipe is...

PLEASE HELP!  ???

I always use cinnamon, ginger and cloves.  I think some people use nutmeg and/or allspice as well.  Also, you can also buy cans of pumpkin with the spices already mixed in.

TBH, I don't know if it would taste "right" with only cinnamon added in.  Can you go to a store and pick some up?

PS I can't offer any suggestions about the pie crust because I always buy mine frozen!

No, I don't have any money. I didn't check the can to see if it was already spiced!...I shall go do it.

0o0o I just checked and it doesn't say it's spiced but I looked on the back of the can and it has a Pumpkin Pie recipe which only calls for evaporated milk and something else which is easy peasy cus I have them. I'm assuming it's spiced then as it doesn't have anything else to add...

All I gotta do really is make the pie crust!

I don't think I'd do it without nutmeg and cinnamon, at the very least! Of course you can make it without the spices, but they're what make it taste all Thanksgivingy! It'd be pretty bland without.

Shorting is the key to a good pie crust

    * 100 g shortening
    * 190 g all-purpose flour
    * 3 g salt
    * 120 ml cold water
 
Mix the first three ingredients together until small crumbles form. Then add water slowly until it develops the consistency you want it at.

I think all I have left is a stick of shortening...I think it's like 2 cups but I'd have to check.

I personally don't think crust needs a ton of flavour - I roll it really thin and it's litterally just a vehicle for the pie goodness. LOL. I use butter - butter and flour, a bit of salt, and ice cold water a tablespoon at a time until it gets to the consistency I want....

If it's like the first one, the spices are definitely already in there and you just follow the directions on the can to make the pie, but if it's just plain pumpkin you'll need to add spices for it to taste right. Since you said that the can says you can just add evaporated milk and eggs, I'm thinking you have the pumpkin pie mix and so you're all set. :D

... Or just do what I, an avowed crust hater, do and forego the crust altogether!  I put my pie filling into small ramekins, then dollop with whipped cream and a sprinkle of nutmeg.  Mmm.

I love crust, but that sounds really good too! I used to do a pumpkin mousse thing that we sometimes had instead of pie, and it was sort of the same idea. Delish!

I'm attempting to make this today, I made one years ago, but that was in the states, when the ingredients were a bit easier to come by! So, I've got to make the cool whip myself, thanks to mom I have vanilla pudding mix, pumpkin from waitrose.......gotta crush cookies myself to make a crust.....have no idea how this will come out, but I'm hoping for success!
