Vegans/Lactose Intolerants - curdling soy milk?
« on: February 03, 2009, 11:23:02 AM »
This is an issue that seems to be unique to me - why does soy milk curdle in my coffee? I've never heard anyone else complain about this, but it's driving me crazy. I rarely have tea or coffee in the afternoon and in the morning I prefer black coffee, but the weather has been driving me to warm drinks and I cannot for the life of me make a nice cuppa with soy milk. But I know other vegans and they don't seem to have this problem??

Anne, try heating the soy milk up a bit before putting it in your coffee. Tempering it should help.

For some reason putting it in the cup first seems to help.

Yup.  I do this now whenever I have soy milk.  Put it in first, then pour the hot coffee in slowly.  Never had it curdle in tea or coffee since I swapped to doing that!

It has to do with chemistry and raising the temperature of the milk slowly rather than scalding it by hitting a hot liquid all at once.  Apparently, it works on normal milk too & makes it 'taste better'.

I can't have dairy for most of the day due to the medication I'm on, and I've never had a problem with soy milk curdling in my tea - is it just a coffee thing? The carton says what others have been suggesting, though, to pour it in the mug first, but I just chuck it in afterwards and it's fine.  ???

I know Alpro put it on the container to do this first to prevent curdling.  I think it is to do with tempering like pkmac said.   ;)
