Calling all Ireland experts! Ireland trip - need some help

Okay - I've booked an escorted coach tour with CIE tours (5 days - Dublin - Shannon) for my husband and me and our two grammas!.  We're planning on picking up a car at Shannon and driving to Omagh, Northern Ireland to visit my grandmother's family home nearby, then staying overnight and visiting the Ulster-American Folk Park before heading off for the airport and back to Harrogate.

I'm in need of some help on several details:

1) Google maps shows the drive from Shannon to Omagh as about 4 1/2 hours.  Any suggestions for a scenic route and a place to stop for lunch along the way?

2) The cost of picking up a car in ROI and dropping it at Belfast international is crazy!  As an alternative, I've considered dropping at Dublin, which is an hour or so longer drive from Omagh than simply driving to Belfast.  Any thoughts?

3) Any suggestions of where to stay near Omagh?
