Pumpkin

So, my father in law just gave me a medium sized pumpkin from the garden.. yay!  I'm just wondering what your ideas are on what to do with it. I'm thinking along the lines of breads, muffins, or something like that. Maybe some toasted pumpkin seeds. Something I can share with my in-laws since they shared their pumpkin with me (and I've been trying my hand at baking lately.) I've never actually started with a whole pumpkin before, though, so what is the easiest way to make pumpkin puree with which to bake these things? Do I just cut off the top, scoop out the strings and seeds and then roast it and puree in the food processor? Any tips and tricks? Thanks!

IIRC, Vnicepeeps posted about this a while ago. I think puree from fresh pumpkin is more liquidy than canned, so I think she let hers drain some. I'll see if I can find her post about it.

But yes, that is what I'd do, cut the top, scoop out the inside, cut it up in large chunks, and roast.

I like my pumpkin bread with a fair bit of spice and raisins.

Thanks, balmerhon! You're so helpful as always! :) I'll do a search and see what I can find.

I'm looking at possibly making these:

What do you think? I'm sure I would have plenty of puree to make a loaf or two of bread as well, if anyone has a nice recipe to recommend. Saw one for pumpkin scones, am still contemplating that one.

Also, how long does a pumpkin keep once it's been cut from the vine? I'm not sure what variety this one is, but it's medium sized and primarily orange, but with green flecks and streaks here and there. It's not your typical jack o'lantern type bright orange pumpkin. I'm hoping I can just hold onto it until the weekend, as it takes me ages to bake stuff and I prefer not to do it after work.

Pumpkin should keep pretty well. I've had them at my front door, or on the table as decoration for weeks and weeks.

Those muffins sound very good! I'll see if I can find my bread recipe.

Homemade pumpkin pie is also to die for, but be warned it takes FOREVER to make. Hubby and I spent 3 hours making pumpkin pie... and at one point the bloody mixer dropped into the bowl and flung pumpkin puree all over the place!

...perhaps its just me lol.

I don't really like pumpkin pie that much. But then again, I've only had ones baked with the stuff in the tins or the store-bought ones. Never a real made from scratch pumpkin pie. And also, I have no pie tins. I have to buy some when I go to the states for Thanksgiving this year. I spent weeks looking for them last Thanksgiving and finally found a set of disposable ones, but they are all gone now, and I don't want to go through that search again!  :P

My best friend gave me a recipe for this pumpkin streusel pie that sounds amazing (and she swears even those who don't like pumpkin pie love it), and I would give that a go, if it weren't for the lack of a pie tin and my lack of initiative to hunt one down.  :) I'll post it up when I get home if anyone else wants to try it, though.

I'm just not sure how DH would feel about it, but I could always give it a try. I just thought the baked goods would be easy to share, and who doesn't like a little something sweet?  :) Those ideas do sound good, though. I haven't tried many savoury pumpkin recipes, but I am a huge fan of butternut squash. Unfortunately, DH isn't, which is why I'm not sure he would like savoury pumpkin dishes as much. But, if you think the recipe might be good enough to persuade the dubious, then send it my way.  :)

I love pumpkin, but think it would actually be wasteful to use a fresh one to make a cake, pie or muffins. You could just as easily use a can for those. I would definitely do something like soup, curry or risotto.Yum!!

If your DH doesn't like butternut squash, I'd be wary of a savoury pumpkin dish for him. But, depending upon the size of the pumpkin, you should be able to try one sweet one and one savoury!

Pumpkin bhaji (curry) is the best.  Perfect autumn dish.  Sooo yummy!  I agree with pkmac, I love using fresh pumpkin for a main/side dish and use canned pumpkin for the sweets.

I've also made butternut squash (veggie) enchiladas before, and I would quite easily see substituting pumpkin for the butternut squash in those - so...pumpkin enchiladas!  :)

There is that really lovely butternut squash recipe on here I made once... any one care to find it?  I'm a bit ill at the moment... but yes pumpkin works great as a sub for butternut squash.  Geeta come teach me to cook!  :) How do you make the pumpkin curry?  Sounds amazing!
