Blueberry Muffins
« on: January 02, 2010, 02:09:09 PM »
I'm hankering for some blueberry muffins, but I don't actually have a recipe. I found some recipes online, but they don't really look that great. Does anyone have a great recipe to share with me so I can make some this weekend? Thanks!

There is a great blog

I would substitute the pumpkin for blueberries AND still have topping on it

I've made this recipe several times in the UK, and it's always turned out well.  I think I used self-raising flour and halved the baking powder.

Mmmm, now I want some blueberry muffins!

I use the base of her recipe for other types of muffins.  Did one with apples, cinnamon and a crumble topping.  Drool!

Jewlz--you got me googling muffin recipes!  I don't have any blueberries, so I'm going to make a healthy oatmeal muffin recipe.  It calls for applesauce, and I don't have any, but I can whip up a batch really easily.

Yum!!! I'd do the same. Save the blueberry muffins for summer when you can get nice local berries!

Chary, I LOVE your new sig!
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

So do select Tesco's and Sainsbury's.  I know Sainsbury's and Tesco's bakeries also sell them fresh and pre-packed.   ;)

They had packets of blueberries on sale at Morrison's for only £1 and they look really good and fresh, so I bought two.  ;D The pumpkin muffins do sound nice, though.

I make bran muffins with blueberries a lot.  I actually prefer using frozen berries, they come out juicier than fresh ones.

I love bran muffins with blueberries, like the Zen Bakery ones they sell at TJs. Yum!
