Never ending Flour Question
« on: December 22, 2010, 01:45:16 PM »
I have a US recipe that calls for 3 cups all purpose flour.  I believe you increase the amt of UK plain flour?  I remember someone posting a chart.  If someone could send me the link, that would be great.

Depends on what you are making.   ;)

US flour has more gluten, so I use strong flour for most US recipes and it works fine.

If you are making a cake you might want to use plain flour with a little extra.

I am making soft sugar cookies.  I thought I read some where that you need to increase the amt of plain flour when using American baking recipes?  Would 3 cups of Strong Flour work better?

That is what I do for cookies.  Cakes are different because they need to be lighter.  I have never had a problem using strong flour.
