Gumbo Pages - good creole recipes

I like this guy Chuck Taggart and his recipes. He has a whole section on stocks.

Several years ago I made his Gumbo for a party at BarbaraG's house....amazing!!

I swear by the Gumbo Shop's recipe on their webpage.  They're in New Orleans and I've eaten there and lemme tell you, it is one hell of a gumbo!  Here's the link: http://gumboshop.com/recipes.php  of course you can use chicken and a good smoked sausage instead of the seafood, works easily well!

The last time I was In New Orleans I dined at the Gumbo Shop and I wasn't bowled over by the gumbo, but that may have been because I ordered jambalaya also - which was so good I almost swooned. It was one of the best things I have ever eaten.
