Lemon Balm?

We've inherited a nice little herb garden from the people who lived here before us.  Once I actually got around to picking at the plants, I realised that what I first thought was a massive patch of mint has actually turned out to be lemon balm (after I googled lemony herbs  :P). 

I've never come across a recipe that calls for it so I'm not sure what to do with it.  There's loads of it growing like weeds so I'd like to put it to use.  Anyone have any suggestions?  :)

It does grow like weeds, so be careful it doesn't take over your garden!

I like lemon tea, so I just pick a big bunch of it and let it steep in boiling water. It's delish.

It takes a lot of balm to make tea, though doesn't it Chary?  I used to grow lemon verbena and use it for tea, but I chose it because my space was limited.  I didn't have the space to grow enough lemon balm to make a strong tea.

I'd use it in anything that could use lemon.  In salads, fish, chicken, soups (although I wouldn't add it til the end), potatoes...in sliced strawberries with a bit of sugar...mixed with regular black tea if you use lose tea.

I guess I don't like it really strong - more like an herbal infusion.

I made my usual batch of iced tea yesterday but put some of the lemon balm in there as well.  I also put a little sprig in with each glass when I drink it.  So good!!!  :)
