Marinades

Does anyone have a good marinade recipe for chicken? We're grilling boneless, skinless chicken thighs over charcoal.

I have a foolproof marinade, its called empty everything in the fridge into a plastic bag and throw some meat in it.

But mainly I stick with soy sauce, sweet thai chili sauce, some ketchup or tomato paste, some dried garlic and some water to dilute any saltiness. I try to avoid using too much salt if I make steak because I use meat tenderiser which is very salty.

I do sort of the same thing - bung a lot of stuff in and hope for the best. As long you use flavours that work well together, you'll be fine! I generally go for the soy, citrus, honey & garlic combo.

yogurt and turkish chicken spice, or ras al hanout, gives a nice texture when you are going to grill....

"Diana's Meat Marinade" from the first Wahaca cookbook (Mexican Made Simple) is utterly amazeballs. It's got a lot of ingredients, but it's totally worth it, and it covers a lot of meat in one batch.
Summer 97 - first visited friends in London
