Banana Cake

Anyone have a good recipe or idea for banana cake? Our car is broken down so we'll be stuck inside and I have some VERY ripe bananas crying out to be used. Any ideas? I only have the basics as well (ie - milk, flour, eggs, vanilla) no buttermilk, lard, etc. so I was hoping someone could help out since I can't be bothered searching past page 3 on google since all I find are recipes with buttermilk.  :P

try googling for Banana Bread rather than cake, can't recall what else is in it but i know there's no buttermilk in that

Thanks for the advice. I don't like banana bread as much as cake. I find it is drier. Maybe that is just the kind I have always tasted. I am open to recipes though.

really? I don't think I've ever had banana bread that was the least bit dry.  It's always been very very moist when i've had it.  When I've made it in the past I've always used the recipe on the bag of very ripe bananas though, so no help in that regard.

Here's my mom's recipe for banana bread.  I *guarentee* it won't be dry.  :)  The secret is to use very over ripe bananas.  They should be quite brown on the outside.

1 1/2 cups sugar
3/4 cup margarine or shortening
4 eggs
4 mashed ripe bananas
1 cup nuts (optional)
1/2 tsp soda
3 1/2 cup flour
1 tsp salt
1 tsp vanilla

Mash banands to a paste and add baking soda.  Cream sugar and margarine/shortening.  Add eggs, one at a time, mixing well between additions.  Add salt and vanilla.  Then add flour to margarine/shortening mixture.  Mix well.  Stir this into banana mixture and add nuts, if using.  Pour mixture into two greased loaf pans.

Bake at 350F/190C for 50 minutes until a knife inserted into middle comes out clean.  Cool on wire racks.

I dont know if you can find some of the items since you are in Ireland ;ie pudding etc...but maybe you can substitute somehow

  *btw you can make sour milk by adding some vinegar to milk,not quite buttermilk but still good.*

   
1 1/2 cup sugar
1/2 cup solid vegetable shortening
2 eggs, separated
2 or 3 bananas, mashed
1 teaspoon baking soda
1 cup sour milk or buttermilk
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla


Mix sugar and shortening until creamy. Add egg yolks and bananas, beat thoroughly. Dissolve soda in sour milk. Sift flour, baking powder and salt. Mix alternately. Add vanilla. Beat egg whites until stiff and fold into batter. Pour into a buttered 9-inch round cake. Bake in a preheated 350 degree oven for 40 minutes.

1 cup sugar
1/2 cup solid vegetable shortening
1/2 cup butter
1 large package vanilla pudding, not instant
1 cup milk
1 teaspoon vanilla

Cream the sugar, shortening and butter until light and fluffy. Cook vanilla pudding with milk until very thick. Cool and add to butter mixture. Mix with electric mixer at high speed for 15 minutes or until it is not grainy. Add 1 teaspoon vanilla. Ice the cake with the icing.

mmmm both of these recipes sound great but I will probably try wishstar's (didn't get to baking like I wanted today) only because I have all of those ingredients on hand.

This may be a bit late, but I generally substitue apple sauce for the oil or butter...makes it more cake-ee and fluffier, plus, it's that much better for you ;-)

I used oil this time because I didn't have apple sauce on hand and canned apple sauce here worries me LOL
