You can get all sorts of different cheddars, some are a lot sharper than others or more crumbly. I've found Pilgrim's Choice to be the closest thing to Tillamook Sharp Cheddar. It's white of course, but all cheddars are here. haha.

I expect that Texas cheddar is milder and melts more smoothly than British cheddar, which is aged and has a strong, distinctive flavour. Certainly colby and colby jack are much, much milder. We always used Monterey jack in Mexican when I was growing up, and when I lived in California I used to go to this taqueria run by actual Mexicans, and they always used queso blanco or asadero. The point of the cheese is to be melty and creamy, British cheddar is too invasive flavour-wise and too oily when it melts.

Although I like both queso blanco and asadero (ate plenty of it living on the US-Mexican border as a child), I'm very particular about where I get them.  Every couple of years, there seems to be a recall.  Thank goodness Velveeta and the regional grocery store I shop at (HEB) now make queso blanco.

It's white of course, but all cheddars are here. haha.

I made Cheddar Cheese Potatoes for Thanksgiving this year and was all thrown off that the final product wasn't orange, haha.  It's the little things.

I think there is a chemical additive for that....yellow 5?

Something like that.  After 24+ years of always having orange cheddar cheese potatoes, however, I panicked a bit when they were white.   :P  It was a stressful day.

Lol - I was the other way around the first time I went to the US. The orange cheese freaked me out because it looked like it was made of plastic :P.

I'm picky about my cheddar though - it has to be white or pale-yellow and it has to be mature enough to be slightly crumbly when you cut it. None of the mild, rubbery cheddar for me :P.

I do a mix of the Red Leicester with a strong cheddar to get the color right. Usually only  little bit of the Red Leicester. *grins*

Having lived in Leicester, I do love me some Red Leicester cheese!  I don't really care what color my cheese is so bring on the white cheddar.  I do miss American cheese, though.  As manufactured as it is, grilled cheese sandwiches just don't taste as good without Kraft American cheese.

I am so with you on the grilled cheese. It's still weird to use cheddar or whatever else we have in the house. I miss my Kraft singles, questionable ingredients and all.

I've definitely seen yellow cheese slices but I've not yet tried them. Might need to give them a go soon.

I eat grilled cheese so infrequently it's probably not worth my money honestly. I can just get it on my semi regular trips back to America. :)

I've tried the cheese slices at Sainsbury's and they're kind of gross, like the store brand singles rather than buying Kraft.

Don't get me wrong, there are a few store brands in the US that were okay, but the majority of them were just not nice.

Well, I hope my children will eat them! They are less picky than I am, but they won't eat cheddar (much less strong English cheddar!) for the life of them!

I know they will eventually learn, but I'm trying to keep as much the same for them at first as possible!

Use them just as you would Kraft slices and don't mention that they're not the same?  See if they notice anything different.  Perhaps they'll just go with it if they aren't told to expect something different.
