Finding a flat while in the US?

Hello. I am currently in Edinburgh with my husband. We arrived here 2 weeks ago to visit and to see if we would like to eventually move here. My husband has an Italian passport and I have an EEA Family Permit. Our goal in life is to move overseas from the US.

We fell in love with Scotland and we desperately want to make it our new home. We tried to find a flat while we where here but unfortunately we ran out of time and not having a job made it extremely difficult for realtors to help us even though we have enough money saved up to pay for rent for at least six months on our budget. Our hotel stay is over on Monday and we don't want to burn through our savings at another or a hostel so we are now coming back to the US.

We found cheap tickets back to the US that included an adjustable return flight to Scotland. We set it to June but we can change it earlier for a fee.

Our circumstances when we get back home is that we have 3 months to live with my husband's parents while we search for our own flat. Our original plan was to find one in the US but it's now depressing thinking about it. We would rather find one in Scotland instead.

So my question is how difficult would it be to find a flat while in the US without a job lined up? I know a big problem is that it's better to view a flat before you commit to it but we wouldn't have that option.

We could really use some help because we obviously don't know what we're doing.

Edit: We are willing to settle anywhere in the country. We travelled almost everywhere except the northern highlands and have not found an area we didn't like. We were hesitant to consider Glasgow at first but after visiting we think it's lovely. In fact I feel much safer there than I do in america.

I would think it would be near impossible.  But it depends on the demand of the market.

I've just put my house up for rent in the South East of England (strong demand).  Within 36 hours of it going live on Rightmove, I had held 6 viewings and had 3 offers at full asking price.  I did the viewings myself so I got to meet the people who were potentially going to rent my house and was able to select who to ultimately rent it to.  One woman was very nice and was retired.  Even though she had substantial savings, I was tempted towards a couple who each work full time and could afford the rent on either salary.  I wouldn't have even considered renting to someone overseas.  But this is my first time renting.  Someone who is strictly an investor may have a different view and be more lenient.

Have you looked at a longer term temp housing such as Airbnb while you search for a property to rent?

We looked into hostels and other short term accommodation. We also use Workaway:
newcomer link: https://www.workaway.info/ [nonactive] but we have had no luck getting a host so far. I'm beginning to regret buying a flight back home but I was just concerned about getting stranded here with no money. We are young and inexperienced.
I have never heard of Airbnb but it looks helpful. Thank you for the link!

I completely understand and don't blame landlords at all for choosing people who are already in the area over a couple overseas. Although since we already have a a trip planned hopefully someone will consider us. We are going to have to be extremely lucky :(
