Cheeseball

Anyone got a good recipe for a nice, normal type cheeseball? I so miss them (since you can't buy them here) and would like to make it for Thanksgiving.

When I was still catering parties one of the ones we made that was always a hit was the easiest one you could imagine.

All you do is let a couple packages of cream cheese soften at room temperature then mix it with about a cup of shredded cheese (cheddar is good) and a couple of finely chopped green onions (green part and all) and season with a dash of garlic powder and worcestershire sauce if you like. Mix it all together really well. Shape into a ball and roll in chopped nuts. Stick in the middle of a plate and put crackers around it and you're done. :P

Brilliant! This is exactly what I was looking for. Does it keep well? Oh, and what type of nuts do you usually use? Would almond slices go well?

You can use any kind of nuts you want really....we always used chopped walnuts. And yes it keeps really well. Just wrap it in saran wrap and stick it in the fridge. The only warning I have is if the green onions are strong and you plan to make it a couple days in advance just use less onion because the longer it sits the stronger the flavor gets. :)

Melissa, thanks for the recipe. I was just thinking about the cheeseball myself. I always get one at Christmastime from Hickory Farms. Im gonna try your recipe for xmas!  ;D

You can also follow the same recipe and leave out the onion and garlic (or leave them in) and smack in a spoon or two or ready made pesto (red or green) or even a spoon or two of store bought olive tapenade.  Almonds are lovely with cheese balls.... or you can even really cheat and used flavored cream cheeses and stuff.... :)

Another easy cheesey thing to do is Brie-en-croute.

Take one round Brie and cover with raspberry (seedless) or fig jam.  A thin coat is fine.  Smack it in the middle of ready made puff pastry (or in the USA I used to buy Pillsbury Crescents -take the seams and work them together to get a fairly decent square) and wrap the corners around it.  Make sure to makea nice design on top with the dough or just flip it over so the seams are on the bottom.  Bake according to the directions on the box/can of dough.  Serve warm.  It is lovely and always a hit and people think you spent ages on it and you didn't!

I had a friend that made the best cheeseballs..She used Softned Cream Cheese, chopped Spring Onions, Pineapple Tid bits and then she mixed it all together, rolled into a ball and then rolled in crushed nuts..I think she used Almonds. She then put the ball into Cling Film and placed into the fridge to set for a couple of hours!  I can't tell you refreshing the pineapple made it taste.
