Tesco now selling cornbread
« on: November 28, 2016, 01:27:01 PM »

It's not quite what I remember from the states, but it's not bad.

I'm not sure who's buying it, but they keep selling it.

I had the cornbread from Asda...it was absolutely horrible. Not even smothering it in chili could have helped it.

We've been making some homemade cornbread lately using fine cornmeal.  It's a bit smooth and cake like, but once you cover it in butter it passes.  The next step is to mix in some polenta corn meal in the hopes it improves the texture.

The cornbread from Sainsburys is really nice!
It's in the chiller cabinet, near the ready-meals.  There are 2 cornbreads in a packet, and they are round, about the size of a taco-sized corn tortilla, and about half an inch thick.

How big is that pone JB?

Where have you found fine cornmeal? I get blank looks whenever I ask for it. Luckily my parents brought over a supply of Jiffy corn muffin mix!

It's at Tesco in the Indian spice section.  The bag is big, like a kilo and decorated with Indian Taj Mahal looking designs.  The polenta can be bought at Las Iguanas restaurant chain.

That Tesco 'cornbread'  doesn't look like anything that I ever have, or ever will eat.  ???

If it's not good old Southern cornbread made in a cast iron skillet, I don't want to know  ;D

You sound pretty wise about corn bread.  This stuff has pieces of oatmeal stuck to the top.  Maybe it's the way Yankees eat it up north.

If you happen to be near Glasgow, Lupe Pintos sells Jiffy cornbread mix.... the busy mom's "go to" when cornbread is needed.  ;D

And yes, as a purist, even the box mix stuff should be cooked in cast-iron.

Even when I lived up north - right on the Canadian border in VT, I never saw any cornbread that looked so odd. My mother and grandmother never used recipes - they made cornbread so many times they could do it blindfolded, and it was always good.

I use Jiffy when I need cornbread fast, and I find it acceptable. But you can't beat a savory corn-pone made with buttermilk (what else) and if at all possible, stone ground corn meal. Nostalgia......

Agreed - from scratch is always better than a box mix!

Funny to see this thread as I've been having an ongoing conversation about cornbread with my coworkers ever since thanksgiving. My first year here I tried making it with polenta and that did NOT work out!

I've been told someone has spotted it at Morrisons but I've yet to see cornbread anywhere, that Tesco one looks odd but if I see it I'll probably give it a go.

My MIL told me she made cornbread from cornmeal she bought at Asda. I told her I was surprised she found it but she said it's available at Sainsbury's, Tesco's and Morrison's too.
