Chocolate sauce for ice cream
« on: May 29, 2019, 01:58:37 PM »
I tried several and wasn’t happy with the flavor.  So I made my own.

2 tablespoons butter
8 tablespoons milk
4 tablespoons cocoa powder (unsweetened, not cocoa mix, I used Green & Black organic)
8 tablespoons white sugar
Splash of vanilla extract

In small bowl, stir cocoa and sugar together, set aside.  In saucepan over medium heat, melt butter.  Whisk in milk, then whisk in cocoa/sugar.  Keep whisking so no lumps form.  Bring to bubbling boil for 1-3 minutes, continuing to whisk.  Remove from heat, and continue to whisk for about 30 more seconds, then whisk in vanilla.  It will thicken more as it cools.

Thick, glossy, and way better than anything available ready made.  Less than 10 minutes.

Any thoughts on a nice, thick hot fudge sauce (American-style, not what the Brit's call "fudge")?

I was at the movies at the weekend and they have a Ben & Jerry's inside.  They sold ACTUAL hot fudge!!!!  When my diet is over, I know where I'm blowing it!!!

I think Lyonaria has a tried and tested hot fudge recipe.

I would love to get my hands on that recipe.  I can't even explain to my husband what hot fudge sauce is, but I know he'd love it.

Use powdered sugar in a larger quantity in that recipe and you have chocolate icing.  ;D

Looking through my collection of early 1900s recipes for hot fudge sauce, will can and upload what I find (hopefully soon) for you.

When you bring this sauce to a boiling bubble, 1 minute is a thinner sauce, 3 minutes gives you a good thick fudge sauce.

We had vanilla ice cream with sliced strawberries and warmed up fudge sauce.  My husband practically licked the bowl.

Speaking of, so is what they call a "Banana Boat" here the same as a "Banana Split" in the USA?

Don't think so - a banana split is a banana split (banana, ice cream. sauce, whipped cream etc.)... it's basically the same in both countries, as far as I know.

A banana boat, on the other hand is when you cut open an unpeeled banana, stuff it with chocolate and marshmallows, wrap it in foil and toast it over a campfire. We used to make them at Brownie and Girl Guide camps.

Sounds yummy! (And like my teeth would fall out from it!)  University Cafe, down on Byres road, has them on their menu, I think.

Last night I spooned two spoons full of this sauce and stirred it into a glass of milk.  Best chocolate milk I’ve had in a long time.

Thank you, katoo!  I made the sauce today, and then I made banana splits!  I used fresh strawberries (chopped up), tinned pineapples that I crushed with a fork, and the chocolate sauce recipe.  I wish I'd had the patience to cook it longer so it was thicker, but itwas totally acceptable.  Yay!

It’s tricky, cook too long and it can turn to fudge, which isn’t necessarily a bad thing, but it can also go grainy.  Whisking it continuously is the real tip to get that glossy smooth finish.

My husband loves it and informed me last night that I need to make more.
