Places to visit in Scotland?

My wonderful boyfriend has booked us a room in a Scottish castle for Valentine's Day.  Cannot get any more romantic than that, in my opinion!   ;D
After we leave the hotel, we will be taking a road-trip all throughout Scotland.  We'd like some ideas for sites to see, places to stay, etc.  We are definitely going to Edinburgh castle, Stirling, and St. Andrew's in Fife.
Any other ideas for fun, romantic places to visit in Scotland in February?

well there nothing much to see in Dundee... it's right across the bridge from fife... um...
lets see... the tallest smoke stack in scotland ( no longer in use but it still stands), um.... Law Hill... it's an extinct top of a volcano... has a monument on top of it to veterens and um oh yeah the pillons (spelling? soundskinda like pile on) of what was at one time an engineering marval and the worlds longest bridge... tay railway bridge.... ummmmm... if i were you i'd skip it...  but if you feel like having a drink with a former american you can give me a call... lol  , Jo  ;D

February is not the nicest time to see Scotland, Im afraid.
You might find that some of the things you want to see are closed in February.

But you could come to my little town, Linlithgow, and see the Palace (birthplace of Mary Queen of Scots) and the lovely Loch.  The Palace is open all year... and it's only 15 miles outside of Edinburgh.

Go to Glasgow for great shopping and nice restaurants.
