Amanda, cold discourages mold growth. I use bread with almost no preservatives and always have to refrigerate it because it takes me so long to go through a loaf.

Thanks, Paula. I'm the only one in my house eating the light bread, so I'm finding the lack of  preservatives to be an issue. Guess I'll stick the loaf in the fridge from now on :)
