We had a heavy meal last night so I'm making a chick pea soup with homemade rolls or cornbread and a salad.

I've been wanting to make cornbread for a while but I don't know if it's going to go with the chickpea soup :-[

Speaking of Chilly I am making Chilli for our tea.  I have started using minced pork instead of beef.  Less fat and gives it a nice taste.

I'll probably make chili on Friday ..but I got a craving to make a medieval stew in bread bowls tomorrow...jess loved making the bowls the last time we did and I don't have to clean up as much because we eat the bowls ;D

Chicken Enchiladas as seen here:

I'll probably modify it a bit (less cheese, bit more spice).

I've been so knackered since starting my new job -- hubs has been doing most of the cooking! [smiley=sleeping2.gif]

Took what was left of our roast dinner tonight, chopped up what I had left of our leek and celery, an onion, some chard, a can of sweet corn, and threw it all in the slow cooker w/some red lentils and chicken broth.

Tomorrow:  chicken soup w/crusty bread.  Mmmm.

Work is taking some of us out to a very nice dinner at a fancy place here downtown.  Should be lovely!!
