Yummy!  :) Does your chicken always stick to the pan, though? Last time I made it, it didn't turn out very well at all because the batter sort of stuck to the pan and most of it came off the chicken.  :-\\\\ I think my non-sticks might need replacing.  :-[

Yeah, sounds like you might need a new pan!  :P Also, don't turn the chicken too soon. I find if I let it get really nice and brown that it's less likely to stick.

Yeah, sounds like you might need a new pan!  :P Also, don't turn the chicken too soon. I find if I let it get really nice and brown that it's less likely to stick.

I'll try that. And look into getting a good wok or non-stick pan soon.  :)

Pasta with your standard tomato sauce and some of the leftover garlic chicken goujons I made last night.  The BF and his kiddo love them.  I will continue to make anything that child will eat without moaning.  ;)

Oooh. Would you mind PM'ing me a recipe or method on those goujons? I make homemade fried chicken breasts (strips, nuggets, etc.) all the time, but my little stepson prefers Birds Eye chicken dippers, of course.  ::) Maybe something different would entice him, and he likes garlic bread, so you never know.  ;)

Sausages (meant to be BBQ'd but it rained) in the skillet on white submarine rolls with mustard.  Homemade hummus & crudités (peppers, carrots & cucumbers).  And this beetroot with yoghurt recipe out of the Moro cookbook.

Back on the low carb, so Egg fried "Rice" made from cauliflower and petit pois with chicken curry, twas really good, forgot what a good substitute for rice cauliflower rice is :)

Mung bean curry from the freezer plus a mushroom curry of some sort since MiL gave us a load of mushrooms yesterday.
I was in a cooking mood, so after dinner I got started on tomorrow night's pasta salad.  It's a new recipe I invented last week.  It's little elbow macaroni with some kind of small white beans.  The base is Italian style made with tinned tomatoes, pesto, Italian seasoning, chili powder, onions, courgettes and peppers.  Then there's celery chopped very fine but left uncooked for a bit of crunch.  It's all stirred together and cooling in the fridge now.

It's yummy and easy to make.  I forgot to say the tomatoes, herbs, courgettes, onions, peppers are all cooked for about an hour until tender and the tomatoes have cooked down.
