Topic: Christmas Baking/Cooking Inspiration: What are you making this year?  (Read 7575 times)

I know we've had a couple of threads about Christmas cooking, but I don't think we've one where people list what they are actually making this Christmas, whether it be baked goods or Christmas/Boxing day lunches.  I thought it might be interesting to see what everyone is doing and perhaps find some inspiration for this weekend's baking fest.

Here's my list ...

Baked Goods:

  • Apple oatmeal raisin cookies
  • Chocolate meringue cookies
  • Gingerbread men
  • Chocolate dipped orange biscotti

Christmas Day:

  • Baked ham
  • Gratin Dauphinois
  • Assorted veg: broccoli, sprouts, peas & carrots
  • Yorkshire puds
  • Panetonne & custard

Boxing Day

  • Leftover ham
  • Home-made macaroni & cheese
  • Assorted leftover veg

I also have the ingredients for Mexican hot chocolate and mulled hot apple juice.  If, after all the baking, I have enough time, I might try a batch of egg nog too.

I always make Rum Brownies...
 
The Charity shop next door has sheepishly asked me to make them again this year, as has the shop keeper of the local stationer, and his family. 
 
INGREDIENTS:
 
3/4 cups melted butter
1-1/2 cups sugar
1-1/2 teaspoon vanilla
3 eggs
1/2 cup cocoa powder
3/4 cups flour
1/2 teaspoon baking powder
3 Tablespoons rum
 
PREPARATION:
 
Heat oven to 350 degrees, grease a 13x9" pan. Beat butter, eggs, Rum, sugar, vanilla in a large bowl. Mix in cocoa, flour, baking powder and salt. Stir to combine. Pour into pan. Bake 20-22 minutes 
 
Drizzle brownies with more rum, as soon as they are removed from the oven, refrigerate. 
Never hold Farts in. They travel up your spine and to your brain. This is where sh*tty Ideas come from.

I'm not doing many rolled cookies this year b/c of time, but all mine this year are from my trusty Southern Living cookbook:

Mincemeat Drop Cookies
White Chocolate Fudge
Fudge
Oatmeal Raisin Cookies
Nestle Tollhouse Pan Cookies

In the bread machine:
Gingerbread

Before I had Roisin, I made and froze:
Nigella's Lemon DRizzle Cake (my one exception)
Banana loaf
banana cake
carrot cake muffins
Gingerbread

Hope to do wholemeal scones and cheesy scones for Xmas day.

Great recipe.. I'm going to save that one :)

 Well since I just moved over not 3 weeks ago I'm sadly not making anything for Christmas this year :(   And unfortunatly have to go to soon to be MIL's for Christmas day.. ugh   So I'll just have to live through you guys :D

  But NEXT year will be DIFFERENT!!!
Only Time will tell.. it's just too bad she's a closed mouth B**!!!

Don't want to have stuffing and all that stuff i made at Thanksgiving....

well the kids said I HAD to make broccili rice cassarole..........


Want something different and maybe a bit elegant................


including the puddings....I will make a pecan pie.....I bought a bundt pan so maybe might make use of that.....


I have a red velvet cake mix I have been hoarding could make that i suppose.............

And, for shame that you would use a CAKE MIX for a red velvet cake...sacriliege! I have the original recipe for the Waldorf-Astoria's Red Velvet Cake with Boston Creme Icing, if you'd like it. (It's a tradition in my family and we're definitely purists...no cake mixes and no bakery red velvets!)

We might do duck. DH is dying for something really traditional but a goose is too big for just us.

As for baking, I'm working up to the 23rd and just too damn tired to have done anything yet. But come my first day off I'm probably going to do fudge, spritz butter cookies, an apple pie, cranberry walnut bread and a tangerine tea cake.

Christmas Day:

FIL makes bacon and egg butties for breakie  :)

Christmas lunch
Turkey
Grandma's stuffing
homemade cranberry sauce, one with the bits, the other without
Sausage meat
Not on veg duty this year so don't know what we are having.

Christmas night buffet
ham, turkey and egg butties
deviled eggs
asst crisps, nuts

Baked goods:
Kiffles
pumpkin roll
chocolate/cream cheese muffins
oatmeal cookies
jam cookies

Expat - would love to know your recipe for mincemeat drop cookies - they sound yummy!!

I am doing some baking this weekend for friends and colleagues. I am having a go at:

cranberry white choc chip cookies
coconut brownies
lemon bars
triple chocolate brownies ;)

Christmas Eve will be my much beloved Nacho Dip as my sons have discovered the joys of tortilla chips
Black bean Chili
Bouche de Noel (for the chocoholics)

Christmas Day
Roast Beef
Scalloped Potatoes
Broccholi Cheese Casserole
Yorkshire Puds (Jamie's recipe - the best!)
Chocolate Christmas Pudding

Also, a small xmas pudding for me and some homemade fruitcake if I get the chance!

here we go!  i use trex instead of shortening and it works fine. 

miuncemeat drop cookies

.5 cup shortening
.5 cup sugar
1 egg
1 cup mincemeat
1.5 cup plain flour
.5 teaqspon baking soda
.25 teaspon salt

cream shortening.  gradually add sugar, beating at max speed w/electric mixer till light and fluffy.  add egg, beat well.  add mincement, mix well.  combine flour, soda and salt, stir into creamed mixture.

drop by teaspoonful on cooking sheets aqnd back at 350 (i use 180 w/fan-assisted over) for 16-18 mins.

i originally made these to get more fruit into stubborn toddler, but they're such a hit i do them lots!

Gingerbread House

All our ornaments are sugar and gingerbread biscuits
