Guacamole Recipe

Yesterday I had a craving for Mexican food, which hasn't gone away due to what passes for guacamole at Waitrose and Tesco!!!  I think it is made differently here.

Does anyone have a good 'ol American/Tex Mex (you know what kind I mean) guacamole recipe? 

This pregnant lady is craving nachos!!!  Sad, but true....  (At least I can use pregnancy as an excuse - this time that is ;D)

Hi Allison!

Big shock, but I have one...in my head of course.  ;)

Just a simple mix of avocado, chopped and de-seeded tomatoes, finely chopped white onion, a squeeze of lemon or lime, and garlic salt to taste. Sometimes I add chopped fresh cilantro/coriander and you can add some finely chopped de-seeded chili if you like it spicy or just a dash of cayenne pepper. I find the lemon or lime is the little thing that makes this so yummy.

I got the recipe from my Mexican-American SIL, so it is official.  :)

I haven't shopped for avocados here.  Are they easy to find? 

Here's a dumb question....how do you de-seed tomatos?  Call me a moron, but do you just pull them out or what?

Avocados are easy to find. To de-seed tomatoes just cut in half and scoop out the middle.

My DW adds green tabasco for spice.

mine is about the same.......

you can get at tesco eat me now with a ripe one and one that needs to ripen avacado

my recipe is about the same........except I always you green salad onions......you know the long thin green topped buggers.....

slice them really thin from the base to about where they start going green and use them......not the tops mind you....and I use lime use......and coriander......and jalapeno's.....a few AND a big tablespoon of sour cream or creme fraiche

salt and pepper to taste......

Check the organic avocados at your store, they are usually a bit riper and nicer than the regular. The regular ones usually need a day before they are ripe enough to use.

I agree with that. I bought a couple of the organic ones last week and they were delicious and perfectly ripe!

Thanks everyone!  Has anyone found that the soured cream tastes different than the States?  I would LOVE to find some Breakstone's about now!!!!

Waitrose also has a line called Perfectly Ripe so if you use Ocado for delivery, that's how you can be sure you're getting immediately edible ones! Mmmm. I LOVE avocados SO much!!!

I tend to make really, really simple guac. 'cause I like the taste of avocados so much. I mush up a couple of them, mix that with some salt, tabasco, and a squeeze of lime juice and then add a handful of halved cherry tomatoes and another chopped avocado to so it's a little chunky. Sometimes I add a bit of salsa but I absolutely hate coriander, and almost all salsas seem to have it.  :-X

As for soured cream, I use creme fraiche instead. It tastes REALLY similar but is much nicer, IMHO....

I'm a bit of a purist, too. I mash up a ripe avocado so it's semi smooth, add salt and lemon. For me it must be lemon. I don't think lime gives enough tang. That said, usually when we have guac, we're having salsa and tomato or something like that as well which is probably why I don't bother with the additional ingredients.

And thumbs up to the anti-cilantro club - that stuff is VILE!!  ;D

I'm trying to make it now....  How do you mash it up?  It is very hard and I did get an organic one.  Maybe it's not ripe enough...

I use a fork. If it's hard to do, it's not quite ripe enough I'm afraid. You can improve the texture though by doing an uncoventional guac... add some mayo or sour cream or something like that to help get it creamy.

An avocado is ripe if you can press it with your thumb and it gives through the skin.

Thansk for the tip.  I think it's an unripe one.  I bought 2, so maybe it'll be ripe by tomorrow!
