I can't offer a recipe as I just wing it...but I've bought buttermilk at Sainsburys, Tescos, and Waitrose.  It is in a small container and its  either with the single/double cream or the custard.  It tends to be a bit thicker than what I'm used to so I add a drop of water. 
If you want some really hearty pancakes try making them with buckwheat flour.  Really good!
Think I'll make a batch for breakfast tomorrow.

I'm so glad for the recipes and all the suggestions here.  I was craving American pancakes ever since I tried some from a vendor here.  I like crepes too, but I'd like to be able to have both.  I suppose it's that only child coming out in me!   ;D

May I hijack for a moment? I just read (in an American cooking mag, no less) that double acting baking powder ONLY means that it reacts to both heat and... crap, what was the other thing... liquid? Anyway, it says it has nothing to do with the strength.

So why do some people suggest doubling the baking powder here in American recipes? I'm so confused!  :P

Buttermilk is definately available at Tesco's and Sainsbury's. I buy it all the time for a cake dh loves!  It is hit and miss sometimes with the stores.  I find the earlier I go in the day the more likely I am to find it.  Also, when I was in the states, I used to bring back the tub of powdered buttermilk.  This way it kept for sooo much longer and I always had some on hand when I needed it.

I used to bring back the tub of powdered buttermilk.  This way it kept for sooo much longer and I always had some on hand when I needed it.

I could have killed for a pancake house breakfast this morning.  I had a few too many after work cocktails last night...  A hangover is just not a hangover without pancakes! :)

But too bad the only kind of syrup you can find is "authentic" maple, and it costs an arm and a leg!  I'm used to simple store-brand butter flavor.  Though fruit syrups are delightful.

Aless... you need to look for Lyle's Maple Flavour syrup!
Its not real maple, and its lovely and thick... just add butter for that store-brand maple syrup flavour of home!  ;)

(its usually next to the Golden Syrup, or with the ice cream toppings).

And its only 99p.

i brought back from lovely Ms. Butterworth's from my last US trip and was so excited the weekend after to make pancakes.  i made them from a recipe i got online (american recipe) and they turned out crap!  so flat...and just not...right.  but, i didn't use baking powder or buttermilk.  i never used either when i made them in the US, so i didn't even think they would need either here.

i think i'll give them another go tomorrow morning with a different recipe.  but i can't be ar*ed to go to the store and look for buttermilk.  i'll have to find a suitable recipe without it.

Try baking powder and baking soda.  I use it in mine and have never had problems.  Also, you don't need butter milk.  Regular milks works fine too.  Buttermilk just gives a nicer flavour.

You can also separate the eggs and beat the whites and fold in after.  That will really make your pancakes fluffy. 

Yep add a bit of the baking soda to the baking powder and Yep beat them egg whites separately and Yep you will get good fluffy pancakes.

Watch the heat, watch for the bubbles and don't flip too early.

I find real maple syrup fairly cheap here now (around 1.50 I think Lidl). I remember years back, that it was so expensive, we only bought for special occasions.

dang it you people! all this blasted pancake and maple syrup talk is doing me in. I should go to bed but I hear all them ingredients singing a harmony -

As I left to come back here on my trip home in April, my mom's friend sent my me, my mil and sil  off with a couple of big bottles of real maple syrup, straight from Maine, I think it was. When I got back here, I gave my husband a try, since he hadn't had real maple syrup, not like this stuff, anyway.....and he didn't like it!!!  ??? Ah well, more for me. Now I just need some pancakes or waffles to go with it. lol!  :D

Where did you see it?  I usually shopped at Sainsbury's and never saw it...unless it's come around in the last year, while I was back in the States!
