A local cheesemaker has a 12-year cheddar that is so full of crystals, it's practically crunchy!  Mmm......

I don't know about shops in other areas, but our Asda is pretty good about stocking locally produced stuff. They have this amazing crystally Welsh cheddar that's to die for!  ;D

Mmmmm. Welsh cheddar. I particularly love Snodownia cheddar (black bomber). My in-laws always bring a huge wheel back whenever they go to their place in Wales.

Has anyone tried making cheese?  I always wanted to try, but with my son's allergies it's sort of a moot idea. :(

A friend in the US once made a sort of ricotta-style cheese, but I don't know anyone who's ever tried making hard cheese before. I'd like to try! Is it very complicated?

I like Red Leicester and some of the milder cheddars.

I have no clue.  Our neighbors make a farm cheese (sort of like a really soft, mild Jack), but I've never asked her what it entails.  I'd love to learn to make my own mozzarella!
