what are mange tout called in America?

Nothing, to my knowledge.  We just had sugar snap peas, and that's what I thought mange tout were/are.  They don't seem as flat as (American) sugar snap peas, but I've never seen the ones like mange tout in the US.  And conversely, I've never seen anything but mange tout here.  Not saying that both might not possibly be here or there, just that I've never seen both as stated.

They can be used interchangeably - cooking wise.  And they don't taste any different to me.

OK, now that you mention that - I've seen that.  But I don't ever remember seeing the mange tout kind in the US, but maybe I was living under a rock.

Mange tout are called snow peas in America, while I've only ever heard sugar snap peas called just that. :)  We usually bought snow peas at Kroger - they'd have a bin of them loose over by the ginger and other Asian veg, as well as sugar snap peas. 

Here in the UK, we usually get our mange tout/snow peas from Sainsbury's - they come packaged alone or with baby corn/other Asian veg, in a tray covered in plastic wrap like the asparagus - or from Tesco, who do them up in a little bag like carrot sticks.

dry cure bacon is the best, as it isnt injected with water, and doesnt make that horrible white gloop in the pan.  

oh yeah... bacon & mange tout stir-fried together would be fab!

I went out and bought two packets last night - of dry-cure, as I remembered you'd said that was the best - and I blame this thread!

Yes, that's how it sounds in my head - just like it's spelled Mange like the disease, tout like the tattle-tale. And so unappealing that way.
