You are lucky if yours are dry! Mine were a nightmare, it took ages to strain all of the flesh down. But, yes, I will be swimming in yummy pumpkin goodness all fall and winter now... I'm all set for pumpkin cupcakes, bread, muffins, pumpkin butter, pumpkin cheesecake... whatever my heart desires!  ;D

I just rinsed the seeds off really well to remove all the pulp and everything, then dried them on a tea towel for a while, then spread them out on a cookie sheet overnight to dry them out a bit more and they seem to be drying up a bit. Will probably toss them with sea salt and toast them soon and see how they come out.  ;)

Well, all we have is a crappy blender (I dream of the day I have a food processor) so I had to add water to get it to puree and then of course had to get all that water back out after!  I feel your pain.  :)  I think I'll follow your plan with the seeds.  I have the cookies baking just now and holy cow do they smell amazing!  I can't wait!  :D

By the way... silly question from a silly person (hehe) but do you eat the shells of the pumpkin seeds? I always do because I have really no idea how to get the seeds out of there otherwise. It hasn't seemed to hurt me or anything so far since the shells are thin and easy to chew, but I was just wondering if there was any method for getting the seeds out of there.  :P

I've looked it up online, and apparently it's better for you to eat the shells as they are high in fiber. Who knew?  ;)

Finally getting around to those pumpkin cookies today!

How did the cookies turn out for you? I've made about 3 dozen and still have half the dough in the freezer. After the third batch I've been adding more oats.

They came out great but I definitely have loads of them.  I made the whole batch and I think there were about 50 of them, and that was with me making the cookies kind of big!  They taste great but they are a little too moist and prone to falling apart.  I don't think I got enough of the moisture out of my puree.  Anyway, the BF and the kiddo are loving them!

I love pumpkins! Anything pumpkin and I'm happy to hear there are ways of getting canned pumpkin in the UK because there are so many recipes I still have to try!  :D

I haven't seen any, but I wasn't looking.  I'll have a look today at Pooky and Grump's (deli with all kinds of imported stuff) today and see if they have any.  I'll let you know.  They are right around the corner from me on New Road Side (the road that goes into Leeds city centre).

Darn!  No tinned pumpkin at Pooky and Grumps.  :(  I thought they would because they have fluff, Jiff, Hershey's and other American stuff (along with much nicer Italian imported stuff, etc.)

Waitrose in Kenilworth has Libby's Pumpkin in 426g tins - enough for one 9" pie.  Cost is £1.29.  Hurry in while supplies last!

For anyone who is cooking with fresh pumpkins - buy the smaller pumpkins that are sold in the winter squash section of your grocery store.  These pumpkins are for cooking and eating and should not contain as much moisture as larger pumpkins used for fall decorations and halloween jack-o-lanterns.
