People from Texas... does anybody have a line on pickled okra?  Or a copycat recipe?  Sources to buy it?  My brand was Talk o' Texas hot pickled okra, but it's not available over here and my family refuse to send it because it could break in transit.  No amount of "That's a risk I'm wiling to take!!" can change their minds.  *sigh*

Have an old pioneer cookbook, will research this for you. I've got one for chowchow, and one for "firecrackers" (screaming hot pickled carrots) if they would help at all...?

Oooh.  Once I get into the whole pickling scene, I could see myself enjoying all the pickled veg.  And anything that uses chilies to spice things up will be a hit with my husband (and me, but more him!).  So, yes please.  :)

I'm really beginning to hate Tesco.  But at the same time, it's prodding me to make a change that I've been interested in doing, anyway.  In putting in my delivery order for this week's shop, I learned that they have removed the Wahaca "flour & corn" tortillas (33% corn) from their product range.  Instead, they have Tesco own brand "corn tortillas" (13% corn).  I won't bother trying them, as my husband brought home a different kind last week when the Wahaca ones were merely "unavailable".

So I will be making a tortilla press and ordering masa harina.  Because Tesco is why I can't have acceptable things.

On the bright side, my husband pointed out that I can engrave my press and have embossed tortillas.  That'll be fun.  :)

If all else fails, Sainsburys do the Wahacca flour and corn tortillas too I believe.

So this might sound crazy. When I first moved here October 2016, we went straight to Tesco's for food shopping. I was excited to see they had a Mexican section or something to that effect, only to be disappointed. It was all Old El Paso! Everyone knows that's not Mexican. If anything, Tex-Mex. Sooo my husband decided to be 'cheeky' and email Tesco telling them that his Mexican wife had just moved here and was disappointed in their Mexican section seeing that Old El Paso isn't Mexican. Lo and behold, they actually emailed him back apologising and said they would send me a box with bits of their new line, the Wahaca foods. AND THEY KEPT THEIR WORD! About a month later, I received a box with salsa and sauce packages, kits, 'tortillas', a bag and a book of recipes! INSANE right?! The sauces were really good. But the tortillas are still lacking.

I too am thinking it'll just be better to make them myself. May I ask where you're getting your press, like can you order it engraved?! That would be sooooo cool! I want one too lol!

That's pretty cool :). I find it so amusing that Old El Paso make 'extra mild' fajita and enchilada kits... I want spicy, not mild!

Oh, and one time I tried ready-made enchiladas from Marks and Spencer and they were the loosest interpretation of enchiladas I've ever seen - chunks of chicken (not shredded) in a creamy 'cajun sauce'!

Here is a movie they made about Raleigh.

Oh my gawd, I'm dying!  That is so amazing!

I too am thinking it'll just be better to make them myself. May I ask where you're getting your press, like can you order it engraved?! That would be sooooo cool! I want one too lol!

I'm going to make it in my workshop so I can have the size I want (all the ones I see that are commercially available are small, and I want the option of making larger tortillas).

I can engrave it with whatever I want.  :)  After I have designed it and made mine to make sure it works as I want it, I will post a pic here and let you see if you're interested.  Custom engraving is not a problem, though the design will need to be simple so it shows up clearly in the tortilla.

Oh, and one time I tried ready-made enchiladas from Marks and Spencer and they were the loosest interpretation of enchiladas I've ever seen - chunks of chicken (not shredded) in a creamy 'cajun sauce'!

That's not right, man.  *headshake*   ::)

WOAH You're going to MAKE one?! That's impressive! I would just want one for funsies so definitely wouldn't bother with even trying to make one lol! Maybe if I had my own business making tortillas that would be an awesome idea! Actually, that's a good idea I think, if I lived somewhere with an actual demand for it besides me hahaha!

Before moving here, I sure did tell my husband that if I didn't find a job, I'd be willing to be the taco or tamale lady on base hahahaha! Luckily, I have found a job because I don't think, in the area that we're at, there would be enough demand for it to make a profit.
