Hey Ashley -- if you get too tired, I might be able to import out some homemade sauce that would be easy to throw together with pasta. ;)

Roast turkey breast, sweetcorn, roast potatoes, rice and gravy.  I love having days off from work, gives me time to cook.   :)

After reading all these great ideas I was all set to go home and cook last night...but went to the gym and ran errands and arrived home STARVING...so it was the single girl's meal of a bagel/cream cheese, pot of yogurt and some toasted almonds for me.  But tonight I AM going to go shopping and cook something.  I have a bunch of frozen veggies that I have to use...perhaps a pot pie or a stir-fry or something...

Yes!  I'm hoping the thread will help inspire all of us.  Funny thing is that so many times I find myself thinking - oh god!  I don't wanna cook!  (Too tired, too lazy, etc)  But most of the stuff I make (which is generally good) isn't all that hard to put together once I get started.  It's just the getting started part!

Btw...we're prolly going to have what I consider a 'boring tea' tonight...  Marinated, grilled salmon, plus potatoes & veg.  Any inspirational tips out there on that?

It tastes good but unless I'm doing Italian, Mexican, or something more of a 'do' -- I feel like it's kinda boring.

How are you doing your potatoes? If you're doing mash you could mash something into them like cheese or garlic (or both) or some herbs, mustard ...  whatever you fancy.  Or rub some fajita seasoning on the salmon before you cook it mmmmmmm.

Good ideas on the potatoes 'cause I was just thinking plain old boiled potatoes (god am I that British already?!) ;) -- thanks Britwife.

I usually marinate the salmon in a mixture of lime juice, soy sauce, sesame oil, garlic, ginger & then throw in whatever spices come to mind.  The fajita seasoning sounds good though!

Grilled salmon and smashed taters doesn't sound boring to me! If the damn plumber doesn't show up AGAIN today, it'll mean I'll be trapped at home AGAIN and not able to go to the supermarket AGAIN ... and will have to have a cheese sammidge for din-din AGAIN.  >:(

I had a great bit of salmon that I marinated in a cooked mix of soy sauce and brown sugar...very yummy!

Yaye! The plumber came and left in good time so I could go to the supermarket! Chicken in a creamy, wine-y, mushroomy sauce with jacket potato and salad tonight! Yummy! Real food! Woohooooo!  [smiley=chef.gif]

In honour of the in-laws' LAST night here, I think I shall order a Chicago-style pizza and have it delivered !
