What to bring to a British potluck?????

Okay, I'm a bit panicked.  In two weeks my course is having a sort of good bye for the summer impromptu potluck.  Now, we had a treats one in December, and I brought cookies, but I think that was a failure.  Can anyone give me an idea of what to bring?  Any good summery recipes out there that are easy or quick to make, and that I can make a decent amount of (for 20+ people) that might be appropriate?  HELP!!!!  I just found out about this Friday, and I have another project due that week, so it can't have loads of prep work.  Also, a few people (at least two) are not eating wheat products, otherwise I'd have thought of making this pasta salad that is decently good.  Please, please people out there with taste and knowledge, help me out!  Sorry if there is a previous post like this out there, I'm bad and haven't checked.  Thanks in advance.

I remember a really good pot luck at my work once and there were two things that were very popular. One was a salad of roasted veggies like eggplant, courgettes, peppers dressed in some kind of olive oil/lemon dressing with a lot of garlic in it. The other thing that went down very well was a trifle that somebody made.

I have a couple of recipes that have always been a hit (at least in the US) that I'd be willing to share if you'd like.  They are both salad recipes (one is a seven layer salad and the other is a broccoli salad).

Let me know and I'll pm you the recipes.

I have a super easy marinated mushroom recipe that always goes over like gangbusters at potlucks.  Plus, you can make it a day or two ahead of time, which is always helpful.

Dunno about the British bit, but one of my easy summer potluck recipes is a black bean salad: canned beans, frozen corn (just toss it in--it's parboiled, so it'll be perfect when it thaws), chopped bell peppers, tomatoes, and green onions, dressed with a mixture of salsa, sour cream, and lime juice. I invented this one day when I needed something for a potluck but it was so hot I couldn't imagine cooking, and it's been a huge hit.

I've done American-style potato salads a few times, and people here love it! I also do a mean couscous salad which is easy peasy to do.

Oh, I bet cilantro would be great in that.

I was also going to suggest this. I always make American (mustard style) potato salad when I have my Brit friends or family over. It's a big hit!

as a non-wheaty myself, I know that a wheat free pasta salad would RULE!

Tesco's Free Frome range Penne Pasta is the best wheat free pasta I've had, and it's the right shape for a pasta salad. It takes some careful cooking (just keep tasting it until the texture is right), but once it's cooked it's just like regular pasta.

Thanks for all the help!  Is it possible to get some of the recipes people have used with what they have taken?  And please, any more suggestions are great.  I'll be getting shopping later this week, and will probably be buying the ingredients then!   :D

Mexican 7 layer dip is a huge hit and SO easy.

Layer from top to bottom:

1 can refried beans (the spicy ones make this a bit better)
guacamole (I make my own but store-bought is fine)
salsa and/or chopped tomatoes
sliced black olives (I use the kind in a can)
sour cream (or creme fraiche - some people mix this with a bit of mayo and taco seasoning)
cheddar cheese
finely sliced green onion

This goes well in a smaller baking dish, say 8x6, but it is easily doubled. Serve with bags of Doritos plain corn chips.

I agree with some of the posters, Do something American. It will be appreciated. And you can bet that no one else will bring the same dish.

Deviled eggs, salads (we have loads that are unique to the land of plenty).

Still tired of coteries and bans. But hanging about anyway.

I just did a couscous salad the other night that was just torn mozarella (a good quality one) with chopped roasted red peppers, toasted pine nuts, and basil. Dressed with a good squeeze of lemon juice and a couple glugs of really nice olive oil and a bit of sea salt. It was super good.
