Phatbeetle - how do you make your herb gravy?

I am making just a turkey breast this year (only 6 of us :( here), but was wondering what to do about the gravy.  I forgot about brining - thanks for reminding me!

I will also make -
mashed potatoes
sweet potato pie
brussel sprouts
cornbread and sage stuffing
pumpkin and apple pie

I just love Thanksgiving.  Who could hate good food and a reminder to be grateful?

My Thanksgiving meal went down a treat...the friends we invited had never had any of the food I prepared..

they love the broccoli rice and the LOVED the sweet potato's with marshmallows and pecans.

I made the Pioneer Womans Pecan Pie and it was DEVINE..so much nicer than the Karo Syrup pie I have always made...will never go back to it! It was chewy and pecan all the way thru...Mmmm

The kids are all coming over today to finish off all the leftovers and I have to make another pecan pie!!!!

I LOVE the Pioneer Woman!  I use one of her soup recipes at least once a month when it gets cold and I refrigerate or freeze the leftovers to eat for lunches.  Amazing stuff!

Phatbeetle - how do you make your herb gravy?

When I cooked the turkey, I put it on a rack, and threw all kinds of herbs and garlic at the bottom- along with a ton of chicken stock- it mixes with all the turkey juice and makes a lovely jus all on its own

I then made a giblet stock

After then combined the two together and added the turkey neck meat.  And some mushrooms because I like mushroom gravy. Brought to a boil with cornflour to thicken.  And Bob's your Uncle- Gravy, nice and simple.   :)

Yay phatbeetle, well done!  :) [smiley=2thumbsup.gif]

Thanks!!! :)  Have a fantastic time at yours!!

B/C it is PURE goodness

Oh, that does look nice! Hubs isn't crazy about the smooth texture of pumpkin pie, though (and that one would be no exception). He isn't used to smooth pies like that, so I am trying a pumpkin pie with a walnut streusel topping that my BFF makes. She says its delish, and she is such a fab cook, I'm sure it will be. Plus I am making some brandy whipped cream to put on top. Yummy!

Hurrah, our fridge is super stocked and ready for Thursday!

A late invoice payment for my husband meant we couldn't do Costco so we had to get a frozen turkey crown at Tesco instead. For the price comparison, the 2kg Bernard Matthews crown was £15. And I'm kinda nervous because even though I'm the main cook at home, my husband is the roastmaster so I've got very little experience roasting a bird! I have a feeling I'll be texting him throughout the day...

And you all just reminded me that I've got to make some Cope's dried sweetcorn, too. YUM!

We get our (free) pies from the Dean tomorrow afternoon (No, she doesn't make them all herself  ;D) Choice of pumpkin, apple or pecan. DS voted for apple, as usual.

Had to work 3 hours this morning, but after that it was home & Operation Thanksgiving has begun at our house...

Have been defrosting the freezer, making chicken stock, and making dinner rolls (for freezing until Saturday) this afternoon!  :)

Meanwhile, we're trying to get our fridge as bare as possible this week (and clean too!) until we load it up toward the end of the week.

My Asda has those fried onion pieces in a big tub. I personally don't like them and am not a fan of green bean cass. though.

Do you have a relatively easy and tasty recipe for dinner rolls? I'd love to make some, but I've never baked bread before, I'm kinda scared.  :P I have yeast and all sorts of flour in the cupboard, so I really have no excuse not to...

By the way, I wanted something special to eat for my lunch tomorrow since its Thanksgiving day and I'll be at work all day and then home alone, so I wanted to keep my spirits up. I made this amazing quinoa salad with cranberries and toasted pumpkin seeds. OMG. If you need to make something special for a vegan side dish, then I would highly recommend this - its so easy to make and tastes divine!

I used basil infused olive oil instead of regular, so that gave it an extra something. I'm sure it would also be delicious with cous cous.

I'll let someone else jump in on this!  My recipe is my grandma's recipe & it's only half written down...so it's a lot of what she would have called 'by guess & by gosh'.  Once I have done it a number of times (and actually write down the quantities of ingredients used!), then I might be able to share it.  It does take awhile though.  :P
