Pork - Any Suggestions

I'm a pasta girl who eats very little meat (only chicken really).  DH is a meat lover and i think is getting a bit bored with my limited cooking skills.

We buy Pork Loins every week and so far the only thing i've managed to come up with was to oven bake them with peppers, leeks and onions (it was more of a what can be bung in this oven dish than any prescribed recipe!)

Any other creative suggestions...bearing in mind that i'm not a great cook!  I looked at the UKY Cookbook but couldn't find anything?

I did pork carnitas for my husband last night, they're pretty easy Or what about a sweet n sour stir fry?

Pan fry with garlic and herbs and serve with mash.

Slice into strips and stir-fry with mange tout and noodles.

Pour Cream of Mushroom soup over them and oven bake them, serving over rice.

Goulash style pork?  I made a nice paprika pork, which is just pork, 3 sliced and grilled peppers, 1 can of seasoned tomatos and 3 TBS paprika simmered for an hour.  You could probably do a nice version of this in a crock pot.

Oh and serve with mashed or boiled potatoes, or rice.

Yay, thank you very much ladies...these all sound great suggestions and i've scanned a few recipe websites and all look within my limited abilities.  [smiley=chef.gif]  I may yet become a decent cook!

Coat with barbeque sauce, cook under the grill, and serve with chips & baked beans.

Dice and use in a korma sauce with rice and naan bread.

Coat with breadcrumbs and fry lightly in oil - or oven bake, and serve with stuffing and veg.

I could go on - I really do love pork, and now wish I didn't have mince to go home to tonight!

I just think it's such a wonderfully versatile meat.  And you don't really need "recipes" per se, because it just goes with almost anything!

i pour a bottle of hoisin sauce over the pork and bake until cooked- maybe 30-40 mins?  slice and serve.  boilied new potatoes & something green & steamed.
If you harbour bitterness, happiness will dock elsewhere.

I pour some sweet chili sauce over them sometimes, salt, pepper, a little olive oil and crushed garlic and bake

Sometimes I make a pasta primavera and throw sliced pork (or chicken or turkey!) in it.

I made something goulash-y one night and it would've been good, but I tried to go for the low fat option and throw yogurt in it instead of cream.  Funny how that never really works out, huh?  :P  It all separated and was gross.  But it had mushrooms, peppers and onions in it, I think and it was to be served over noodles or rice.

Spread with mustard and sprinkle with brown sugar then bung 'em under the grill.

Very messy to clean up so put foil underneath when cooking but delicious to eat!! ;D

my gma makes "pork chop casserole"

put slices of the pork at the bottom of a baking dish
1 can of cream of mushroom soup (mix with 1 can of milk & s&p)
peel and slice pretty thin as many potatoes as you need to layer potato and a little of the mushroom soup mix to fill the pan. usually I make a ton of it cos it warms up quite well.
make sure to s&p each layer quite generously or it will taste bland
bake at 400 covered in foil until the potatoes are done usually 1.5-2hrs
