It's called Cannelloni.

Except cannelloni is made with pasta tubes or sheets, not pancakes.

Not necessarily.  It depends what region you are in.  Though sometimes when made with pancake batter it is called Crespelle.  But generally Cannelloni refers to the shape.

Ah, interesting!  I just googled crespelle, and found some recipes.  I love to cook Italian food, but I'd never heard of this.  What region does it come from?

Oooh, now you've got me!  My knowledge of Italian food is pretty good, but not that good.  I *think* that Cannelloni in the south is pasta, and in the North is pancakes, so I'd guess that Crespelle is the Southern version with pancakes, but that is a pure guess.

Prezzo Italian Restaurant - Salisbury  ;) called Crespolini Porchini.  ;D lol.

There are some recipes are on the net.  I also found this one below for using butternut squash or pumpkin.  :)

CRESPOLINI DI ZUCCA
Winter Squash Crepes recipe by Janet Vanderhoof

Filling:
2 c. squash puree (butternut or delicata)
1/2 c. toasted walnuts, chopped (Toast in a 350 degree oven for 5
minutes.)
1/2 c. shredded parmesan

Mix together.

Make a pancake crepe recipe. I use 1/2 whole wheat flour. Cook the crepes
in a large, buttered, non-stick skillet. Fill and fold each crepe
wedge-style. ( Put about 1/3 cup of the filling on one quarter of the
crepe. Fold in half and then in half again.) Keep warm in the oven.

Sauce:
Melt 1/4 c. butter. When it foams, add 4 fresh sage leaves per crepe.
Crisp the leaves in the butter. Remove from heat before they burn.

Sprinkle each crepe with parmesan cheese and pour the sage butter over.
This amount of filling and sauce makes 6 crepes. 2 crepes is a very
generous serving.

called Crespolini Porchini.

I'm guessing it's made with porcini mushrooms, then . . . I found some recipes online that look similar to what you describe.  Might try them on pancake day.

Yes I think the one I originally had was made with Porchini, but I think I am just going to use normal white mushrooms in mine  :P

Let me know how yours turns out and I will do the same  :)

Pancake day is pretty awesome. :)

In 2007 I had only been here a few weeks, so by the time pancake day got here, I was still completely discombobulated, so David made some simple pancakes with sugar and lemon juice on them.  YUMM!!

Last year, David made pancakes again, this time filling them with nutella and strawberries --I'm allergic to bananas, so we couldn't put those in-- OH MY, those were so good! :)

THIS YEAR, I'm making American pancakes, just simple ones, with plenty of maple syrup.

Too bad you can't find Mrs. Butterworth, or Log Cabin over here without paying an arm and a leg for them at import stores!

Mmmm, on second thought, I think I'd rather have some Cane Patch cane syrup...  Ooooohhh..... ;)

Can you believe I reached the age of 43 without ever celebrating a Pancake Day?   :o  My first was in 2001 when I worked at a Lutheran church preschool.  Just think of all the delicious pancakes & crepes I missed.  I've spent the last 8 years trying to catch up.   [smiley=laugh.gif]

Morrison's have Betty Crocker pancake mix - both "Original" and "American style"!

Also they have Bisquick.

Both on the same "Pancake Day" end aisle.

I object to pancake mix.  It doesn't contain anything you can't throw into a bowl yourself in about the same time required to open the box.

I agree! hubby always buys the ready mix stuff when he wants to make them, but I prefer to follow Delia's recipie  :)

I can't see the point in mix.  But I don't use a recipe either...

some flour
pinch of salt
egg
some milk
(add less milk, sugar, baking soda and vanilla extract if going for US pancakes).
