I made crispy Peking duck with pancakes for the first time. ;D Was excellent, if I do say so myself... Stir fried some broccoli and carrots for a side.
Finally living with my Husband in London after 6 1/2 years together but apart... and loving my life!

I had an even stranger meal today than yesterday. 
Leftover colcannon.  Two slices of chorizo.  A english muffin with a smear of cream cheese and black pepper on top.   And miso soup.  Apparently I wanted minerals.   
I've never gotten food on my underpants!

I put a brisket in the crock pot at 9:30 this morning. By the time we had it at 6:30 it was falling apart and perfect. We had roasted potatoes, steamed cabbage and Yorkshire puddings with it.

I was so proud. ;) So easy though, and it came out restaurant quality! I used Jamie Oliver's recipe but I used 2 duck legs instead of a whole duck. It wound up cooking for about the same amount of time though! I turned up the oven (fan assisted) to 200C for the last 5-10 minutes and it came out really crispy. I used TONS of the 5 spice, and I think I would use even more next time.

I also saved all the fat that I spooned off, and I'm going to make roast potatoes with it today.  ;D

I made beef stew to use up the rest of last night's brisket... and to ward off the chill of this um.. May evening.

'Ward off the chill' and 'May' just do not belong in the same sentence, unless there is also something about air conditioning.  ::)

No clue I'm just not that hungry so Dh said he will have something out of the freezer I might just have a bowl of cereal only cause I have to take my meds with something to eat.

I'm making bruschetta with salami, potatoes roasted in the duck fat from yesterday, and just going to heat up everything that's leftover in the fridge. ;)

Tonight was pintos and rice, corn salsa, and tortilla chips (oven baked, from a tortilla)

We're going to the American Diner nearby, per my MIL's request. It was her birthday yesterday, so we'll be celebrating. Apparently she's dying for an oreo milkshake. :)

Well, seeing as its Cinco De Mayo....and my DD and I will do ANYTHING for Mexican food, we're doing fajitas. If we were back in the States, we would be out to La Carretta (our local Mexican place) and I would be having Queso Fundido, some enchiladas and a GIANT magartita!
09/08/2011-Glyn leaves for UK
01/30/2012-Biometrics for UK spousal & dependent visas sent out w/ application same day
02/03/2012-Email from UK Consul General application needs further processing will receive decision within 10 working days.
02/09/2012-Request for more payslips and custody papers for daughter.
02/22/2012-Submit the requested documents with prayers.
02/24/2012-UK settlement visas issued :)
03/12/2012-Arrive in MAN UK :)
