I've been on a soup cooking spree today. I'll be having a bowl of mushroom bisque and at least one stuffed pepper. The husband will have a choice of stuffed peppers, mushroom bisque, rustic cabbage soup, butternut squash soup (much better than I thought it would be!), and the leftover lamb and beef stew we had last night.

Figured that I could make soups/stews to use up the fresh bits of stuff we have before our trip (we leave Wednesday!) and I can freeze them in bags for quick already measured out lunches.

I've been trying to do this, I froze some chicken and veg soup in muffin tins and then popped them out into a bag. Homemade cup a soup!

Doh! I've never even thought about using the muffin tin to freeze it! I'd definitely waste far less bags that way, but I do like being able to stack the bags. Hmmm...

I already freeze leftover broths in ice cube trays. Although, the only leftover broth we ever have is lamb broth, everything else gets used too quickly!

Made a pork and apple risotto that came out really nicely, with some mash on the side. Easy and very yummy.  :-)

Pizza soup. *If* my tummy can handle pepperoni by then. Thinking about making some homemade bread as well, but I need to study a bit for my Life in the UK test today as well, since the test is this Wednesday! Eek!  :o

I get my love of cooking from my Mom and she's making tonight: Spaghetti, Meatballs and Italian Sausage Ragu, Summer Squash and Salad -  :)

Not so traditional thanksgiving sirloin steak with peppercorn sauce, sautéed mushrooms and onions, mashed potatoes with gravy, veg and maybe pie! :) (my husband really wants key-lime pie tonight...again, not traditional, but we like it!)

Roast chicken, roast potatoes, broccoli and carrots, Ocean Spray cranberry jelly and an apple pie from Wholefoods.
