Cubed pork (I used boneless pork chops), red bell pepper, mushroom and onion in a sweet and spicy sauce over Basmati rice.

Baked chicken, sage and onion dressing, and corn. I wasn't feeling inspired beyond the chicken and dressing.

Beef stew and crusty bread. I bought a beef roast yesterday and left it in the crock pot from 4:30 yesterday afternoon, then added the veggies this morning and let it simmer all day. The meat was so tender and amazing. Can't wait for round two! We're having something else tomorrow, then the rest of the stew Tuesday after it has had time to blend.

We are being taken out in about an hour, but we don't know where yet. The original plan was to have curry. We met mom for lunch since we aren't going to be able to make it to her house for Christmas, and ordered a takeout each to eat tonight, since we traditionally eat in our pjs for our anniversary, to avoid the Christmas chaos of going out.

However, I just received the invite from a friend as his gift to us, so we are are having the curry tomorrow.
