I've got a few good recipes for biscuits! I love biscuits and gravy so I have to make my own.

I want the gravy recipe.  But not yet.  I need a kitchen first.  But I've never known how to make the peppery gravy that you get on biscuits, and I like it on Texas Toast, chicken strips, and french fries, as well.  Mygawd, I used to love Dairy Queen's chicken strip basket of joy.  *sigh*

Oh yes. DQ chicken strip basket!!

I always cook up sausage then add cream to the pan after I remove the sausage from the pan then add pepper and reduce.

I don't mess about making a roux. It's not really needed.

If you want sausage gravy it is. Lol

But just white country pepper gravy does need the roux. It's really easy to make.

Oh, that's what I want!  White country pepper gravy.  Is that what I should search for?  At one of the high schools I attended, the "a la carte" line had cups of fries available, and you could also get little cups of gravy.  So I ate ate that for lunch a lot.  I was such a healthy teen.  ;)  And then I discovered the chicken strips basket at DQ, and that made my life.  Some day, I'll be able to make french fries, and I'll find a recipe for gravy, and it will be happy happy joy joy.

Yes, just search for white country pepper gravy.

And I love beef gravy on fries.

I found oxtails on discount at Tesco yesterday so I made some gorgeous oxtail with onion and mushroom gravy in my Instant Pot tonight.

25 minutes for oxtail that tastes like it cooked for hours. I need fries now to put the gravy on.

Yep, the fat from the sausage is needed for the gravy, otherwise.....it's the roux for you!

Ok recipe 1 for biscuits....

Baking powder biscuits

2 cups flour
2 tbsp sugar
4 tsps baking powder
1/2 tsp cream of tartar
1/2 tsp salt
1/2 cup vegetable shortening
1 egg
2/3 cup milk

Preheat oven to 450 farenheit (230c)
Sift flour, sugar, baking powder, cream of tartar and salt into a bowl.
Use a pastry cutter or fork to chop shortening into the flour mixture until it resembles course crumbs.
Whisk egg and milk together in separate bowl and slowly add milk mixture to flour mixture stirring as you pour, until dough is moistened and well mixed.
Drop dough by spoonfuls onto and ungreased baking sheet, bake in preheated oven until biscuits have risen and are golden brown. 10-12 min.


Buttermilk biscuits

4 cups flour
1 1/2 tsp salt
1 tbsp baking powder
2 tsps baking soda
1 cup vegetable shortening or 1 cup +2 tbsp unsalted cold butter
1 1/2-2 cups buttermilk

Mix flour with salt and baking soda and baking powder in large bowl
Cut in cold butter or shortening using your fingers until it resembles small pea sized pieces in the flour.
Add buttermilk and mix until the mixture forms a loose dough....DONT OVER MIX THE DOUGH!
Scoop the dough out onto a floured surface and roll it out into a rectangle shape. Fold into thirds over itself then roll out gently and do it again. Finally, roll it out until about 1 inch thick.
Cut biscuits out of the dough. Cut out circles or just slice into rectangles.
Add biscuits to an ungreased baking sheet and brush them with some extra buttermilk.
Bake at 375 f for 25-30 min until golden brown.

Rick, how do buttermilk and baking soda biscuits compare to one another, in terms of taste and texture?

I'm reading this with interest myself.  The first recipe is almost exactly what I made but leaving out the tartar that I am too disorganised to have .  Next time I'll do the buttermilk ones.

Buttermilk tends to be a bit fluffier and softer, the baking soda is a bit closer to what you might get in the average biscuits and gravy.

So, generally, I dislike biscuits (I hear that audible gasp!). But I like the kind I get at Popeye's chicken.  Do you know if they are buttermilk?  I suspect that's what they are, and that means I have figured out my preference.  Finally.

I just used whatever was in the packets that Popeye's gives.  I think it is honey butter.  I didn't notice cinnamon in them.  And the last time I had it was at least 4-1/2 years ago.  :P

I think you're right about honey butter, but Texas Roadhouse has a cinnamon honey butter for their rolls and it's outstanding!
