We do a lot of Thai curries & pasta with veggies added. For portion control we actually weigh the rice and pasta. Now we are making an extra portion so I have lunch the next day, but the same way... Just weighing an extra portion. I do stir fries and such too. I'm also a zoodle fan. I basically fit as many veggies into the meals as I can. :)

And its not low calorie, but it is a really satisfying snack. "Awfully Posh Anglesea salt pork crackling" found on amazon (and possibly elsewhere).... Will help keep you full if you're eating less carbs!

Are those the wheat free ones? I have a hard time finding just pork rinds plus salt. They are almost all coated in wheat. Or starch.

I usually have a baggie of cooked meat in the fridge for quick meals. I'll cook a couple whole chickens in my Instant Pot or even a rare top side of beef or a pork shoulder.  It makes lunches and dinners real easy.

I found them in Waitrose once but could never remember which brand they were.  Maybe I can find them again now.

My partner came home with a 'treat' for me, that he got at a street food festival.... it was a paper cup containing about 6 little pork rinds.... they were selling them as Piggy Popcorn for £2 for a wee cup of 6 bits!!!   :o  I didnt tell him i could get the same thing in Home Bargains for 29p!

What a racket fair food is!! Sadly I usually cannot eat the cheapest ones, but these were pretty reasonable on amazon. A box of 12 bags was about £10. It's a bit odd how fewer ingredients is always more expensive!

I'm not a crackling fan to be honest but I *did* try to do the right thing when I went grocery shopping last night and got some veg and hummus (which I'm not even a massive fan of but couldn't get any thousand island dressing to dip haha) and some crackers and cheese so I thought I could take a small bit of cheese and a small pack of crackers for a snack and veggies and dip etc, as that'll be healthier snacking than crisps. Also tried to get loads of veg for breakfast snacking as I'm a grazer at breakfast (if I am even in the mood to eat at all).

I know right. Unfortunately less preservatives means they have to sell it at a higher price to make up for any loss due to shorter shelf life. I did notice that most foods here in Britain go bad faster. Even veggies I keep in the fridge! Am I crazy or is our fridge just not good?

If it was cheaper, it would sell more quickly and they wouldn't have to worry about the shorter shelf life, haha! ;D

Oohh yes. I love my Instant Pot-like kitchen gadget too! I use it at least 3 times a week coz it makes getting food on the table so easy. Sometimes I keep the slow cooker on the lowest setting overnight to have lunch ready the next day. Though most of the recipes I have are for stews. I wonder what else I can do with it. Maybe some savory soup during the winter time.

I love hummus, but I can see why people might find it boring, or something.  If "boring" is why you're not a massive fan, look for jalapeno and red pepper flavoured hummus.  It's not massively hot (or even hot at all), but the flavour makes it much more interesting.  I'll eat plain hummus, so I'm not the best judge, but do try the flavoured stuff.

My favourite dipping foods are cucumber sticks, carrot sticks, pita chips (I used to make "pita" chips by using a pizza cutting wheel to slice up tortillas into squares, giving them a light brush of olive oil, a dust of garlic powder, then baking them 'til they crisp up.... back when I had an oven), and just pieces of un-crispy tortilla.

I did notice that most foods here in Britain go bad faster. Even veggies I keep in the fridge! Am I crazy or is our fridge just not good?

I've found that most of my veg lasts much longer than I thought it should in our 'fridge.  But then, I've also turned my 'fridge down repeatedly and still end up with ice milk.  It's a very good 'fridge.
