Corn Casserole recipe:

1  can creamed corn
1  can regular corn (drained)
2  eggs (beaten)
1  8 oz. sour cream
1  tbsp sugar (optional)
1  box Jiffy Corn Bread mix
1  stick butter (melted)

Preheat oven to 350 degrees. Grease up an 8x8 dish.

Mix all the ingredients together in one big bowl. Pour it into the dish.

Bake for 45 mins until golden brown. Check with a tooth pick, should come out clean. Can serve straight from oven in the baking dish.

Final product will have consistency of a very moist corn bread but not soupy wet. If you cut it into squares to serve, it should hold its shape.

This is served as a side dish like green bean casserole would be. I apologize for any new addictions this creates. :) I have friends who I've shared the recipe with that have made just this for dinner. haha
Mix it all up together in one big bowl.

Kerinay - haha  I love that place. I also love how many Seattlites there are on here! Where abouts do you live over there? I seriously look forward to meeting some of you when we come over.

About the Brits not trying foods - Well I'm going to force-feed some of them my grandmothers Corn Casserole that I make every Thanksgiving. It's just about the only thing I make that comes out right haha   And if any of them turn their noses up at it I'll say "I've come over here and eaten haggis twice and your horrible pickled onions. You're going to open your mouth and eat this corn casserole! (It has 2 sticks of butter and a table spoon of sugar and is to die for. Maybe quite literally. haha A good ole' Southern recipe).

I make this but we call it corn pudding.  ;D

Yes, we are right there! The gateway to The Lakes! We love going for walks and hikes. My husband is an avid cyclist as well. I am planning to buy a bicycle as soon as I get there. Definitely let me know when you are planning to come up!  :)

Oh my goodness! Thank you! I get a similar dish at this BBQ restaurant here in Miami. Sooooo yummy!  :D

Oooh, we should meet up as well!  We are in the SW but MIL lives in Lancashire.  Would be a straight shot up the M6 to you guys whenever we are visiting her!  Next time will be for Christmas.

If you get out and about a lot (as I imagine you do), you’ll start to find your other local Americans.  We are everywhere.  Literally.

I've only met two so far in the two years I've been visiting there... It's such a small town. But I'm sure that if there are more, they'll find out through the grapevine that I'm there as well. We'll all find each other.  ;D

I'm from the south. I've never had it or even heard of it until I moved to Ohio. Now it's on my Thanksgiving menu.

You will.  Hopefully you don’t come across the few that “want to be the only gay person in the village”. They exist but are rare.

I saw an advert on a bus today for a place in Glasgow called 'Stack & Still :  The Pancake Pioneers'.  I googled it and got just a plain single page website that said 'coming summer 2018', but nothing more about it.

It's the 'still' part that worries me.  Goodness knows I like a drink, but I wouldn't necessarily want a wee goldie with my stack of pancakes in the morning.

I'll be curious to see what this place is all about.
