When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

My boy was hankering for some comfort food, so I made cream gravy, chicken fried steak, creamed spinach and french fries.

The chicken fried steak was SO good! Jake took a photo to show his ma :)

I'd never made one before and to be honest couldn't even imagine eating one until I met my DB (I've only eaten one once before!) I was quite proud of my efforts but now going for a two hour bike ride to burn off those calories!

For the filling: I used pepper jack cheese, but you could use anything. Garlic, Shredded Chicken, onion, cream cheese, sour cream, and salt and pepper. (all to taste)

The sauce was fresh cooked tomatillos (but canned would work), cilantro (coriander), cumin, salt and pepper whizzed up in the food processor with some cream added at the end.  I used corn tortillas and topped all the fatty goodness with cheese.  Baked for about 40 minutes until it was bubbly.

I really like the avocado ranch- a big handful of cilantro, a fresh avocado, 1 jalapeno, 1 lime, red onion, and maybe 1 cup ranch dressing whirred together in the food processor.  My sister said that she could drink it, she liked it so much.  ;)

Homemade chicken and rice soup with some various vegetables thrown into it.  Perfect excuse for buying the cheap cuts of the chicken.  :)

Either manicotti or stuffed shells (depends on which pasta I can find), salad, and bread.
