We (in the UK) also had this egg myth in the 80s that was responsible for a huge drop in egg sales

I recently tried a recipe that used goats cheese instead of mayo. They were YUMMY! Very creamy/rich. I'll see if I can dig up the recipe after work and post it.

I made these on Thanksgiving and they were VERY good. Even better than my mum's but don't tell her!  ;)

That's it, I'm going to have to make some for Christmas.
Both my husband and father in law insist that since they are called 'devilled' they must be spicy hot.  Like devilled kidneys.  When I explained what a basic recipe had in it they just looked at me like I was nuts.. >:(
Bet they don't think I'm nuts after they try some!

sorry this is late but devilled eggs PA Dutch style are the simplest thing

hard boil the eggies
let cool,  peel, slice in half
scoop out yolks, mash with fork, stir in mustard and mayo and paprika to taste
refill eggs w/the mixture
garnish tops w/more paprika to look pretty

YUM!

enjoy whatever recipe you choose to follow!

Hey - does anyone know the trick is for keeping the yolk in the middle of eggs when you boil them?  I saw it once on a cooking show and can't remember what it is.
