A yellow cake with chocolate frosting to celebrate DH's PhD - but I burnt the top of the cake a bit.   :P

In order to make myself feel better about losing my job, I made Southern-style banana pudding from scratch (just an egg-milk-flour-sugar-vanilla custard poured over layers of sliced bananas and vanilla wafers - NO instant pudding mix, NO whipped cream. You can put meringue on top if you like, but even that's a little too much).  I used my next-to-last carefully hoarded bag of Jackson's brand vanilla wafers! Eep! It's gotta be Jackson's, Nabisco 'nilla wafers just don't cut it. Last time I was home, I stuffed five bags in my checked luggage, and they arrived intact, remarkably enough.

When I run out of vanilla wafers, I am going to try digestive biscuits, just to see how it goes. I love digestive biscuits, in spite of their terrible name.

(Since the custard is cooked on the stovetop, it wasn't baked exactly, but since it's a dessert, I guess it can fit in here!)

It's shortcake covered in dulce de leche and chocolate sauce.  I am ommiting the chocolate though.  They are VERY rich.
