Here is the cardamom ice cream recipe from my cousin. Just skip this post if you're looking for something healthy! Yikes!

1 1/4 cup sugar
4 egg yolks
3/4 cup milk
3/4 cup full fat milk (no skim here!)
1 1/2 cup double cream (heavy cream is the same thing)
2 t. vanilla
1 heaping t. chopped fresh ginger
6-8 crushed cardamom pods (I could never find cardamom pods, so I just used about 1 T crushed cardamom.)

Combine sugar and yolks.  Beat until paste and set aside.

Bring milk to simmer, not boiling.  Slowly beat into egg mixture.

Return mixture to saucepan and simmer very gently, stirring constantly until thickens like custard.  Strain into large bowl and chill overnight.

The next day, stir in cardamom, cream, vanilla, and ginger.  Put into ice cream maker and follow the manufacturers directions.

Enjoy!

That's it. I'm buying an ice cream maker. Pam, what kind did you get? We had one in the UK but it died an early, painful death. This thread, plus the hot weather we're already having, is making me want to make a ton of it!!

Do you think you could get away with using less sugar? I made ice cream this weekend and it only had 6 Tablespoons of sugar and it was plenty sweet. I might make some again later this week. This one sounds good.

Honestly, I have no idea. I don't remember the ice cream being overly sweet. Keep in mind, this was made in the US, so it was granulated sugar, not caster sugar. I think if you used this much caster sugar it would probably be too sweet.

I imagine you can use less sugar though I don't think I'd take it down to just 6 Tbsp.

I'd also say that if you do use cardamom pods you'd want to take some of the outer pod bits off. Bit too much roughage IMO... I'd probably go with the freshest powder I could get.

This is the one I got in red.  I bought an extra bowl to keep one chilled at all times.  Both times I made recipes they came out really nice.  I made sure the base was well chilled and I got no bits of ice or anything.

I really like it! They have a bigger one, but I figured I'd rather make fresh batches than keep it stored.

As for the sugar mentioned... I'd do a taste test.  If it's sweet enough for you that's good.

Both cardamon and ginger are bitter spices so you might need a bit more sugar than 6 TBSP.  I use Splenda Blend in a lot of stuff, but that's because my dad is a diabetic.

I've got a nice little cheapo Magimix Le Glacier, its not fancy, but it does the trick.

I love our Kitchen Aid attachment!  We haven't tried yogurt, but it does great with ice cream and sorbet.  Unfortunately, it does take up a fair amount of space, so probably not an option if you've got a teeny freezer. :-\\\\

Can't wait to try some of these recipes!

Are there any icecream makers that don't need a freezer? I'd like one but have no freezer space at all.

I had amazing homemade cinnamon icecream yesterday and I really want some!

You can get the old fashioned kind that require rock salt and ice. I just find that it is a lot of palaver, but you still get nice ice cream.  The other option is to buy a very expensive ice cream maker that actually has a freezing function built in.

The cheapest one on Amazon.com is about $200 and they can rn about $600.
