Roasted veggie lasagna tonight. Can't wait until it is finished.

I ordered way too much Japanese food, and then I ate it in bed... :P An eel and shrimp tempura roll, gyoza, and veggie katsu curry.

We're making Nando's Garlic Peri Peri chicken (I LOVE their bottled sauces!) with mash and some veg.

We ended up ordering a curry, and will have the above tomorrow night.

We're going to a friend's house tonight. I think they're smoking a chicken, we're having some sort of sweet potatoes, and salad.

Felt up to cooking today, so I had angel hair with marinara sauce and loads of roasted veggies - carrots, parsnips, leeks, and fennel. :)

DH requested burgers and chips, but as we were pulling away from the shop I realized we forgot the ground beef. D'oh! So, we're having fajitas tonight and he'll go get the beef for tomorrow.  ;D

I'm thinking either salmon and veg or a baked potato...I'll see what I'm craving once I'm done with my workout!

I have no idea!! DH is getting home from his trip soon, I'm really tired and am not going to work tomorrow due to some crazy fatigue that won't end, and I need something homemade... Anyone have a suggestion for something yummy with minimal effort?   :-\\\\

Stir fry?
I do have homemade stir fry sauce in the freezer for a lazy day, though I don't have any meat out for it... Veggies currently in my fridge are: red cabbage, carrots, parsnips, and fennel. Dunno how good for stir fry the parsnips and fennel would be...

I have homemade steak and ale pie filling in the freezer. Would a bisquick crust be good with that?? I could just throw some veggies in to roast at the same time.
