I am using the pioneer woman's enchilada recipe as a base to make chicken enchiladas.  I meant to do this at the end of last week, but I never got around to it.  So tonight it is!

Toast and cereal

I'm way too tired tonight to be bothered with anything, because that would involve a trip to the grocery store to get supplies and I really can't be bothered with that

but you have to be careful sometimes they don't come out right..I made her fruitcake cookies at Christmas and they didn't turn out right and LOADS of other people had problems with the recipe as well...

I know exactly what you mean.  She and I have had a few disagreements, but for the most part, I like her stuff.

I love PW, too! Only had 1 problem with a recipe so far - her brownies in her cookbook. They came out cakey, which I hate. But I make so many of her recipes - and it's very unlike me to follow a recipe!

DH's turn to cook today, and he made Toad in the Hole, Chips, and Peas. :)

DH made fish fingers, mixed veg and lemon and rosemary steamed rice. Oh, how I love, love love having our own place! ;D

I made some healthy enchiladas, first time I've made enchiladas and they were great! Had some veggies on the side.

We had a winter vegetable stew (including chestnuts) with couscous.  (It would have been vegetarian, except DH used chicken broth.)

We had a winter vegetable stew (including chestnuts) with couscous.  (It would have been vegetarian, except DH used chicken broth.)
My kind of food (except with veggie broth)--sounds good!

Tonight's going to be easy--gnocchi with tomato sauce (I'll use Lloyd's as a bas and add stuff) and steamed broccoli.
