Well, last night I tried my hand at arroz con pollo. Everyone seemed to like it, but I think I would prefer it with boneless, skinless, chicken breasts (recipe I had called for thighs). The rice was fantastic and there was so much flavour! Its definitely something I'll make again. May even try to sneak in brown rice without the chicklet and hubby knowing  :P
Tonight is braised beef, with veg, over some mashed taters for the two picky eaters....and with some brown rice for me as I've really grown to like it (not as much as mashed potato mind you)  ;D

02/24/2012-UK settlement visas issued :)
03/12/2012-Arrive in MAN UK :)

Just been to Lupe Pintos and got corn tortillas, salsa jalapeno and some other important stuff!

DH's been busy in the kitchen today!  Made a beef bourguignon that we will have tomorrow (usually tastes better second day anyway), and then he did a lovely roast chicken with harissa paste & lemon seasoning all over it, plus potatoes & salad.  I'm planning to make a chocolate cake tomorrow.  Mmmmmm.

I worked late-ish yesterday and hubby drove back from Manchester so neither of us were up to cooking so we got takeaway from our local Indian place.  We very rarely do takeaway.  It was really good--better than we expected!

Not sure what we'll have tonight...

I've put a bean stew in the crockpot. I love coming home to the smell of dinner already done. :)
